Chocolate White Chocolate Chip Banana Muffins

I came up with this variation on the traditional Banana Nut Muffins by adding cocoa powder and swapping out the nuts for white chocolate chips!

Who doesn’t end up with a few extra bananas laying around on the counter, overly ripe and past the point of anyone eating them? ¬†Well we almost always do!

These sweet little ditties are perfect for a grab and go breakfast or a after school snack. I packed these babies up and sent them in a “your mama misses your sweet face!” care package for one of my kiddos who is off at college!

Chocolate White Chocolate Chip Banana Muffins

Ingredients

  • 3 Medium Bananas
  • 1/3 C Vegetable or Canola Oil
  • 1 Egg
  • 1 C Granulated Sugar
  • 1 1/2 C All Purpose Flower
  • 1/4 C Cocoa Powder
  • 1 tsp Baking Soda
  • 1 C White Chocolate Chips
  • Sugar for sprinkling on top

Instructions

  1. Preheat oven to 350 degrees.

  2. Smash bananas in a large mixing bowl. Add oil, eggs, and sugar. Mix until well combined.

  3. Add flour, cocoa powder, baking soda, and baking powder. Fold in until mixed.

  4. Fold in white chocolate chips. 

  5. Scoop batter into muffin tin lined with muffin liners.

  6. Sprinkle sugar on top for added crunch.

  7. Bake 20-22 minutes.
