Not Your Mama’s Chicken Salad
If you are looking for a light easy entree for a Ladies Lunch (That doesn’t mean that men won’t love it too!) or an elegant dish to serve at a bridal or baby shower look no further! This is Not Your Mama’s Chicken Salad!
The addition of grapes and mandarin oranges gives this tasty treat a sweet twist that will impress just about anyone. While the bite sized chunks of chicken are a delightful variation from the traditional canned or shredded chicken typically found in chicken salad.
Not Your Mama's Chicken Salad
- 4 C Instant Rice Cooked
- 3 C Boneless Skinless Chicken Breast Cooked
- 2 C Grapes Quartered
- 1/2 C Celery Finely Chopped
- 1 Small Onion Minced
- 15 oz Mandarin Oranges Drained
- 1/2 C Real Mayonaise
- 2 tbsp Sugar
- Salt and Pepper
- 4 tbsp Mandarin Orange Juice
Combine all ingredients in a large mixing bowl, stir, and enjoy on a croissant or bed of lettuce.
