Not Your Mama’s Chicken Salad

If you are looking for a light easy entree for a Ladies Lunch (That doesn’t mean that men won’t love it too!) or an elegant dish to serve at a bridal or baby shower look no further!  This is Not Your Mama’s Chicken Salad!

The addition of grapes and mandarin oranges gives this tasty treat a sweet twist that will impress just about anyone.  While the bite sized chunks of chicken are a delightful variation from the traditional canned or shredded chicken typically found in chicken salad.

Not Your Mama's Chicken Salad

  • 4 C Instant Rice Cooked
  • 3 C Boneless Skinless Chicken Breast Cooked
  • 2 C Grapes Quartered
  • 1/2 C Celery Finely Chopped
  • 1 Small Onion Minced
  • 15 oz Mandarin Oranges Drained
  • 1/2 C Real Mayonaise
  • 2 tbsp Sugar
  • Salt and Pepper
  • 4 tbsp Mandarin Orange Juice


  1. Combine all ingredients in a large mixing bowl, stir, and enjoy on a croissant or bed of lettuce.
