Caesar Kale Cranberry Pasta Salad

This incredibly easy pasta salad combines the nutritional benefits of kale with tons of amazing flavor!  In the amount of time it takes to cook the pasta al dente you will have the rest of the ingredients prepped and ready to go!

This simple dish will not only be an awesome accompaniment to any weeknight dinner but the beautiful color combination and elegant flavors allow this dish to hold its own on your holiday table!

We used Brianna’s Asiago Caesar Dressing for this pasta salad. This rich and creamy dressing with a hint of fresh cracked pepper pairs perfectly with the tangy sweetness of the dried cranberries in this salad!

Caesar Kale Cranberry Pasta Salad

Ingredients

  • 1 Pound Box Farfalle Pasta (bow tie) cooked, al dente and drained
  • 1 Bottle Caesar Salad Dressing Brianna's Asiago Caesar Dressing, 12 Fl Oz
  • 2 Cups Chopped Kale
  • 1 Cup Grated Fresh Parmesan Cheese
  • 1 Cup Dried Cranberries
  • 1 tsp salt
  • 1 tsp ground black pepper

Instructions

  1. In a 2 quart stock pot cook pasta according to box directions.  Drain the pasta, rinse with cold water to stop the cooking process.  Place cooked pasta into a large mixing bowl and set aside.


  2. Rinse and chop kale, place on paper towel to allow kale to dry. Add dried kale, dried cranberries, salt, and pepper to pasta. 

  3. Add half of the caesar dressing and grated parmesan cheese to the pasta/kale mixture, stir well. Add remaining caesar dressing and stir until all ingredients are completely combined.

  4. Garnish with additional parmesan cheese.

  5. Store in an airtight container.
